1   Bean, Tomatoes and Spinach Pasta

Serves 2: Ingredients:
1 cup whole wheat pasta
1 package fresh spinach
1 cup cherry tomatoes
? teaspoon canola oil
1 can cannellini beans (or bean of your choice), rinsed and drained
4 tablespoons feta cheese (optional)

Directions: Make pasta as directed. While the pasta is cooking, saut? tomatoes and spinach until spinach is wilted. Once pasta and saut? mixture is done combine in bowl with beans. Separate into two dishes. Add 2 tablespoons feta cheese on each.

2   Crispy Parmesan Chickpeas

Makes 7 1/2 cup servings: Ingredients:
2 cans (15oz each) chickpeas
1/2 c parmesan grated
1 TBSP olive oil
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper

Directions: Rinse chickpeas under cold water, spread out on paper towels to dry 15 min. Pat them dry with additional towels. Heat oven to 400 degrees. In large bowl whisk together cheese, oil, garlic powder, salt & pepper. Add chickpeas & toss to coat. Spread chickpeas on cookie sheet & roast 50-60 min until dried & very crisp. Let cool completely.
